Campfire BBQ Chicken Foil Pack

Ingredients:

  • 2 chicken breasts (or thighs, boneless preferred for easier cooking)
  • 1 cup BBQ sauce (your choice of flavor)
  • 1 cup bell peppers (mixed colors, sliced into strips)
  • 1 medium onion, sliced thinly
  • 2 small potatoes, sliced into 1/8-inch thick rounds
  • Salt and pepper to taste
  • Olive oil or butter (about 2 tablespoons)
  • Optional: Shredded cheese (cheddar or mozzarella) to sprinkle on top

Instructions:

  1. Prepare the ingredients: Start by slicing the potatoes into thin rounds to ensure they cook evenly. Slice the bell peppers and onions into strips. If you’re using chicken breasts, cut them into halves or quarters for quicker cooking.
  2. Assemble the foil packet: Lay a large sheet of heavy-duty aluminum foil (about 12-14 inches long) flat. Drizzle with olive oil or place a small pat of butter in the center. Start with a layer of sliced potatoes as the base, followed by the chicken pieces, bell peppers, and onions.
