Campfire Sausage and Veggie Pack

Ingredients:

  • 4 sausages (Italian, bratwurst, or breakfast sausage work well)
  • 2 zucchini, sliced into rounds
  • 1 bell pepper, chopped into bite-sized pieces
  • 1 onion, chopped
  • 2 medium potatoes, sliced thin
  • 1 tablespoon olive oil
  • Salt, pepper, and garlic powder to taste

Instructions:

  1. Prep the sausages: Cut the sausages into 2-inch pieces, making them easier to cook through and mix into the veggies.
  2. Prepare the foil packet: Tear off a large sheet of aluminum foil (about 14 inches long). Lay it flat and drizzle with olive oil.
  3. Layer the ingredients: Start with a layer of potato slices as the base. Then add the sausage pieces, zucchini, bell pepper, and onion. Sprinkle with salt, pepper, and garlic powder to taste.
  4. Seal the packet: Fold the foil around the ingredients, crimping the edges to form a sealed packet. Be sure the packet is sealed tightly to keep the juices inside and prevent the contents from spilling out.
  5. Cook over the fire: Place the foil packet over hot coals, logs or on a grill grate. Cook for 20-25 minutes, turning the packet halfway through for even cooking. The sausages should be browned and cooked through, and the potatoes tender.
  6. Serve: Open the packet carefully (watch for steam) and serve directly from the foil, or transfer to plates. Great for pairing with fresh bread or a salad.
