Campfire Shrimp and Corn Foil Packets

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 2 ears of corn, cut into 2-inch rounds
  • 1 tbsp olive oil or melted butter
  • 1 lemon, sliced into rounds
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh parsley or cilantro (optional)

Instructions:

  1. Prep the shrimp and corn: Peel and devein the shrimp. Cut the corn into 2-inch pieces, which will help it cook faster and evenly.
  2. Assemble the packet: Lay a large sheet of foil and place the shrimp and corn in the center. You can arrange them side by side or layer them.
  3. Season: Drizzle olive oil or melted butter over the shrimp and corn. Sprinkle with paprika, garlic powder, salt, and pepper. Top with lemon slices for extra flavor.
  4. Seal the packet: Fold the foil over the ingredients, crimping the edges to seal it tightly.
  5. Cook: Place the foil packet over medium heat on the grill or campfire. Cook for 10-12 minutes, or until the shrimp turns pink and the corn is tender. If you prefer your shrimp more charred, you can open the packet for the last 2 minutes of cooking to allow the shrimp to get a little crispy.
