1 cup cooked rice (white, brown, or any variety you prefer; use pre-cooked rice for faster prep)
1 cup mixed vegetables (corn, peas, carrots, green beans, etc.)
1/2 cup shredded cheese (optional; cheddar or mozzarella works best)
1 tablespoon soy sauce or teriyaki sauce for flavor
1 tablespoon olive oil

Instructions:
Prepare the ingredients: If you’re using fresh vegetables, chop them into small bite-sized pieces. If you’re using frozen veggies, make sure they’re thawed and drained. Pre-cook the rice (or use instant rice if you’re short on time).
Assemble the foil packet: Tear off a sheet of aluminum foil (about 12 inches long) and lay it flat. Start by adding the rice as the base layer, then top with the mixed vegetables. Drizzle with olive oil and soy sauce, and season with salt and pepper.
Optional: Sprinkle shredded cheese over the top for a creamy, melted finish.
Seal the packet: Fold the edges of the foil to seal the packet tightly. Make sure no steam escapes, as this helps the veggies steam and cook properly.
Cook over the campfire: Place the foil packet on the coals, logs or grill grate and cook for 15-20 minutes, turning occasionally. The veggies should be tender, and the rice hot.
