Hobo Meals – Campfire recipes

Here’s a very simple and delicious campfire recipe for Campfire Foil Packets (also known as hobo meals):

Ingredients:

  • 1 lb of ground beef (or chicken, sausage, or tofu for a vegetarian option)
  • 4 medium potatoes, thinly sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup of corn (fresh or frozen)
  • 1-2 cups shredded cheese (optional)
  • Salt and pepper to taste
  • Olive oil or butter
  • Aluminum foil

Instructions:

  1. Prepare the foil packets: Tear off large pieces of aluminum foil (about 12 inches per packet). Lightly grease the center of each with some olive oil or butter.
  2. Layer the ingredients: In the center of each foil piece, place a layer of potatoes, followed by ground beef (or your protein choice), onion, garlic, bell pepper, and corn. Season with salt, pepper, and any other spices you like. Add a small pat of butter on top if you want extra flavor.
  3. Wrap the foil packets: Fold the foil around the ingredients, sealing the packet tightly so no steam can escape.
  4. Cook over the campfire: Place the foil packets on hot coals, logs or on a grill grate over the fire. Cook for about 20-30 minutes, turning occasionally, until the potatoes are tender and the meat is cooked through.
  5. Finish and serve: Carefully open the foil packets (be cautious of hot steam) and sprinkle with cheese if desired. Enjoy!
